“Babe, I’m going to start something drastic, and a bit insane.”

“Babe, I’m going to start something drastic, and a bit insane. I’m going to go completely gluten, dairy, and soy free,” I said to my husband after watching the documentary called, “The Thyroid Secret.”

“You’re going to what?”


“Hhhhhhh. First of all what is gluten?”

“It’s a protein found in wheat and stuff. It makes the bread stretchy and sticky. But apparently it’s also in almost everything else including dressings and seasonings.”

“What can you eat then?”

“I don’t know, but I’m gonna do it. I’m so done living like this. I’m ready to try anything.”

“Alright, well if you’re going to do it then I’ll support you and do it with you.”


I remember the first few days we would scrounge around the fridge and pantry searching for foods we could eat that didn’t contain those three things. Nearly everything we had had one or all of them. It was an intense few days to say the least. Feeling hopeless, frustrated–add on a round of withdrawal symptoms–and you’ve got a mess. I’m sure my husband was already beginning to wonder what he was getting himself in to and questioning if it was going to be worth it.  

Little by little, we learned new ways to cook and foods that were safe. It didn’t take long before we started noticing a difference. I lost nearly five pounds of inflammation after only two weeks. My belly was much less bloated and by that symptom alone I was already motivated to keep going. My husband didn’t keep as strict to the diet as I did but he was already experiencing less bloating and had lost six or seven pounds. I had less fatigue as well.

This diet was extremely hard. Everywhere we went to eat, the menu spoke back saying “gluten, gluten, and more gluten.” It was starting to get annoying not feeling like we could enjoy a meal out. We pushed forward, however, and before long the insanity just became second nature.

The weight that was shedding off was an encouragement for us; yet after we looked back on what we ate compared to what we were eating now, we realized the foods we used to eat was really just junk. Preserved, processed, lacking nutrition and artificially made. Since we had to learn to check ingredients on the food labels, we began to notice all the chemicals and man-made products we were putting into our bodies. Even foods that should be safe, had preservatives and genetically modified organisms (GMO’s).

Seriously, have you checked the label of the cereal boxes your kids eat lately? Most of them are partially or completely engineered with GMO’s!  

So we went from the first few weeks of feeling like we were insane; to feeling empowered knowing what exactly we were putting in our bodies.


That friends, is a good feeling.
